Sulawesi coffees can be the jewels of Indonesia as they are often grown at altitudes unheard of on other Indonesian islands.  This lot is from one of the higher elevation zones, farms starting at 1800 meters above sea level, and topping out at 2100 meters.  "Saleko", is the name for the blue eyed, black and white spotted buffalo, used in burial ritual in Sulawesi, and here represents this high quality blend of coffees from small producers who belong to a local cooperatives.  Our roast is surprisingly clean, with deep roast characteristics of chocolate, caramel, and dried fruit.  The flavor gets a tad fruitier as it cools in your cup.

This coffee is part of the 'Farm Gate' program from our friends at The Coffee Shrub, which means they have negotiated directly with the farmer, and guarantee prices that are at least 50%, and often more than 100%, over fair trade.
