THE FARM: This coffee comes from smallholders located in the town of Chimhucum high in the Los Altos mountains of Chiapas. Chimhucum – which means "Two rivers" in the Tzotzil language - is a micro-climate characterized by a wet and cold climate for much of the year. Growers here in Chimhucum take great care to respect the land. Coffee is shade-grown and sustainable practices such as composting and water treatment are employed. The farmers here pay equal attention to processing.
In this strictly high-grown the coffee harvest was hand-depulped and semi-washed. During this process the producers fermented the coffees for between 6 – 12 hours resulting in exceptional fruit sweetness and medium-bright acidity. During dry milling, the lot was meticulously hand-picked and sorted; the quality of this lot is outstanding!
OUR ROAST: The processing method yields a super-clean cup… and our deep roast brings to life the delicious flavors of this mountain coffee, balancing apple and citrus-notes nicely with milk chocolate and almond. This is just a great everyday drinking coffee!
