THE FARM: We’re always excited to see Peru on the menu! It’s smooth flavor, we think, offers some of the best value for your dollar. This coffee is grown in Northwest Peru. Coffee producers in Santo Domingo de la Capilla are very serious about picking only the ripest cherries, so it can take up to five pickings to fully harvest.  After each picking, the cherry is pulped immediately and the parchment is fermented for approximately 12 hours and then washed and dried.  While it is drying on patios it is turned several times, which helps to achieve the region’s particular beautiful shade of green.

This is a peaberry lot, making it even more special! Peaberries occur naturally on every coffee tree, but in very small amount (typically < 5% of the harvest). One of two embryos inside the coffee cherry fails to germinate, leaving the other behind to take on a rounded shape as it matures…we love’em! This lot is also Certified USDA Organic, meaning it was grown using natural methods.

OUR ROAST: The flavor profile is well balanced in Capili Peaberry. The aromatic profile has a mild sweetness of semi-sweet chocolate, accented by hints of caramel and roasted barley. The cup has a moderate level of chocolate bittersweets in the middle roasts, accented by notes of almond milk, and caramel. A muted herbal aspect comes through as the coffee cools off and has some burdock/root beer elements that make a subtle impression on the finish.
