THE FARM: This renowned region owes much to the dry, hot winds that come in from the mountains of Mexico's Tehuantepec plain. There are a couple different routes to the highland coffee towns of Huehuetenango and the preferred route takes you by a little house on the side of the mountain that sells "chuchitos". Chuchitos are tiny tamales that pack big flavor, filled with meat stewed with tomato or chili; they can be eaten by the handful, and they're delicious…just like the coffee from this region. Huehuetenango is the highest and driest of Guatemala's non-volcanic regions.

Due to the high altitude, nearly all of Huehuetenango's producers process their own coffee. Fortunately, the region has rivers and streams in abundance, so mills can be placed almost anywhere.

While many of our coffees grow organically by default, Huehuetenango is certified USDA Organic; the farm and supply chain must adhere to strict standards from tree to cup.

OUR ROAST: This is a nicely balanced cup, expressing burned sugars and mild bittersweetness that extend to the aftertaste. The sweetness in the smells are a tad more muted than what you find in the cup, but shows an array of chocolatey smells like semi-sweet chips, cocoa powder, and a chocolate biscuit note. The cup is markedly sweeter than the smells let on, with flavors of baked sugar and caramel. Acidity is fairly muted, but present, and a cool cup produces accents of almond, toasted marshmallow, and caramel-coated popcorn. Our roast yields a chocolate-laden profile great for espresso and milk drinks.
